Well here we go, getting down there and I am getting more and more excited. This weekend, Pastor Dee, Andy and I got together on Saturday AM to make the final meeting arrangements. We shared a nice cup of coffee and a wonderful conversation. I am grateful to be going with such wonderful people. I know that the George's are doing great work in Cambodia already. They are there now and we will see them this coming weekend.
I am prepping for the potential that some of the food may not sit well so I am making up some Beef Jerky for the trip. :) I bet though that once the kids see it, it wont last long. Ah.... as it should be!
Here you can see the preparation of the jerky. I made a teriyaki ginger jerky, some with black pepper and some with Old Bay. Its about ready to come out of the dehydrator.
Started packaging my luggage today to see if everything will fit. I assume that it will be damp/humid and possibly wet on occasion so I am packaging clothing in separate bags (you can see them beside the suit case)
Also visible is my mosquito netting, some yo-yos for the children, flashlight, fast drying towel, sun lotion, hand sanitizer, TP, my boonie hat and mosquito stuff.
I bet this week goes VERY fast. We depart from Fairview at River Club at 615AM on Friday.
